NIGHT SHIFT GENERAL INSTRUCTIONS
For The Morning, by around 6 AM where possible:
Make fresh new coffee in the coffee pots. Add freeze dried
coffee, start with one pound, directly into the water.
Set up the serving line with fruit, juices, any
pastries/bagels/breakfast stuff to tide people over till we have
breakfast going.
Stock where possible with the condiments that might go with breakfast,
cream sugar, syrup, jelly, juice…
If a menu has been provided anywhere, have the supplies for the
breakfast pulled and accessible. Start defrosting the food for
lunch and perhaps dinner.
Clean thoroughly the hot truck and trailer. If possible, drain
the waste water, and fill with fresh water.
Stock cold truck including coffee
Clean out Cambros (portable coffee urns)
Clean the grounds, straighten around trailers, check generators.
