Coffeepot,  Serving Warmer, and Holding Warmer

The unit has an electric coffeepot.  It also has propane food warmers for keeping food hot.

The serving warmer is often used to keep sandwiches warm and ready to eat.

The Holding warmer is for storing trays of warm food.  Note that the disposable aluminum trays are not strong enough to be slid into the slots of the warmer; they need to be set on a heavy aluminum tray, so they do not collapse.  



 

Coffeepot

The coffeepot has been converted to a restaurant style electric coffeepot.   It is connected directly to the plumbing of the truck, and fills automatically.     Note that the red handle is for instant hot water.

Making coffee

Put a filter in the filter basket.  Put a scoop of coffee in the filter.  Slide the filter basket, which goes under the control panel.  Put a pump pot under the filter basket.  Push the start button.  The coffeemaker should fill the pump pot.

Serving coffee

The coffeemaker is used to fill pump pots, which are taken out of the truck to the serving table.

Cleaning the coffeepot

Before putting away the unit,  remove the filter and coffee grounds, and leave the basket in the open to dry.

Serving Warmer




Warming Oven
The serving Warmer is found on the right side of the truck.  It has glass doors inside and outside.  The glass is somewhat fragile, so handle gently.  This is frequently used to hold sandwiches warm until they are needed.  The temperature should be 150 to 160F for food safety; check with the thermometer in the warmer.

Note that the serving warmer is challenging to light.  You are almost standing on your head, using your elbow to hold the door up, using one hand for the lighter, and the other for the red button.

Holding Warmer


The holding warmer is found on the left rear of the truck.  It has two doors, with the capability of holding dozens of pans of food.  There is a separate pilot light and control for each door.  The temperature should be set a little over 140F for food safety; check with a thermometer.

Lighting the pilot lights

The warmers use the same system to control the pilot light and temperature.  The knob controls the temperature.  To light the pilot light, push in the red button, light the pilot light, and continue to hold the red button for at least ten seconds.  Once the pilot light will stay on, turn the knob to the on position.  There is one pilot light and control for the serving warmer, and two for the holding warmers, one for each compartment. 

Note that each appliance has its own individual propane shutoff valve, look for the red handle.
