Water System

General Information

The unit has a fresh water tank located on the left hand side over the sinks.  It is filled from an access point on the left side of the unit.  There is a 12 Volt DC pump under the sinks, and a five gallon 110VAC electric hot water heater under the sinks.  The water pump is controlled by a toggle switch above the burners, next to the exhaust fan switches.

To fill the fresh water tank, open the access panel on the left side of the truck, and connect a hose.  (Flush the hose before connecting the hose to the unit. )  The valve should be in the horizontal position to fill the tank.  When the tank is full, water will overflow out the bottom of the unit.

Washdown Hose

There is a washdown hose and sprayer located in the cabinet above the hand wash sink.  To use this hose, connect a hose to the outside fill point, and turn the valve at the fill point to the vertical position.

The water taps on the right hand side of the unit are for filling the coffeepot and the steam table.  These taps are only usable if a hose is connected to the outside fill point, and the valve at the fill point is in the vertical position.  The fresh water tank barely holds enough water to fill the coffeepot and the water jacket.

Draining the fresh water tank

There are two valves under the sink that drain the fresh water tank.  However, this will not drain all the water out of the system.  There will still be some water in the hot water heater and the water pump.

Important:  Turn off the circuit breaker for the hot water heater before draining the water, to prevent burning out the hot water heater.

There are two waste water tanks, one on each side of the truck.  Pull the handle to open the drain valve.

The waste water should be drained periodically when on site, and before the truck is put away.  This water should be drained in a sanitary sewer, not into a creek or on the side of the road, if possible

Winter use of the unit

The fresh water tank and the waste water tanks are insulated.  The waste water tank has a 110VAC heater to prevent freezing.  If the unit is in use, it will generate enough heat to keep the pipes from freezing.  However, if the unit is not in use, and AC power is not on (not plugged in and generator off), and it is stored outside, the water inside could freeze, potentially breaking pipes, and damaging the hot water heater, the pump, etc.   Avoid storing the unit outside if the temperature is likely to be below 20 degrees at night, to prevent freezing and possible damage. 

If you do need to store the unit outside, drain the fresh water tank, the coffeepot and water jacket, and both waste water tanks.  Be sure to turn off the circuit breaker for the hot water tank before you drain the fresh water tank, to avoid burning out the heating element for the hot water tank.
